The kids let me choose the cookie this week. I have really been wanting to try these, and they were a big success. They are thin and crispy with the just the slightest hint of orange. They do have shortening in them, which I was trying to avoid, but that is probably what makes them so good.
Orange Ginger Cookies:2 cups sugar::1 cup vegetable shortening::1/2 cup butter, softened::1/2 cup molasses::2 eggs::4 cups flour::2 tsp baking soda::2 tsp ground cinnamon::2 tsp ground ginger::2 tsp allspice::2 tsp grated orange peel::1/4 tsp salt::sugar for sprinkling.
Cream together sugar, shortening, butter and molasses. Add eggs. Beat until light and fluffy. Add dry ingredients, beat until combined. Divide dough into two. Shape into logs wrapped in wax paper. Refrigerate overnight. Cut logs into thin slices. Bake for 9-12 minutes at 350. Immediately sprinkle with sugar.

those cookies sound lovely, and as fate would have it, I have all the things to make them ( I don't normally have molasses and oranges here) So I know what Giggles and I are doing later.
