Boxes of girl scout cookes meant time off from our Cookie of the Week.  We have a few thin mints hidden in the back of the freezer for a summer day, but for the most part they are gone.
It was a nice little break, but I really miss baking when I don't do it.  There is so much satisfaction for me in seeing a full cookie jar.  And then joy, in seeing it empty, knowing everyone enjoyed them, and I get to fill it again.
I was sort of burnt out on the whole Girl Scout Cookie flavor, so didn't try any of the recipes for the Homemade Girl Scout Cookies.  I still plan to, one day.
Sherri e-mailed me with a link to this recipe, and  I have been thinking about them ever since.  I decided not to tell the kids the name of them to see if they liked the flavor.
They are espresso-chocolate shortbread cookies.  I love the whole process of these.  Again, another slice and bake where the dough can be made ahead of time.  All three of my kids loved them.  My eight year old knew instantly that they were coffee flavored.  My twelve year old said he never tasted that flavor, but loved it.  Hmm. 
The recipe calls for instant espresso.  I didn't buy anything fancy, just Folgers, decaf.  It actually smelled so good I had to make myself a cup.  Really.  I used to drink Folgers instant coffee in my dorm my freshman year of college.  It tasted really great.  I don't know if it was the coffee or the memories.

Without a doubt, this was one of the best cookies.  The only problem is that it didn't make enough.  Next time I will definitely double the recipe.

  4. ohhhhh this one sounds the best! combing three of my loves, coffee...chocolate...and my favorite cookie ever-shortbread! How can it be bad!?!?!?!?! This one is getting made-one day

  9. thanks so much for sharing the recipe for these! i usd to bristle at the idea of eating shortbread, but as i got older and wiser i fell in love with it! and these look so good my mouth is watering!

    okay. the problem with you posting pictures of cookies is that they always look delicious. the problem with that is i always want to make them. the problem with that is that i would eat them all. and you know the problem with that. enjoy making more!

    Can't wait to try this recipe! Medaglia d'Oro is an actual instant espresso you can find in many grocery stores, or particularly an Italian market. I keep a 2 oz. jar in my freezer for just such occasions! :D Yum - thanks for posting.

  19. Oooh, those look good. I love how you can just slice them like that. I want to try some but I have hubs on a diet this week! Do they freeze well? Should I freeze before I bake or after?

  26. Holy Yummo, those look fantastic! Love the folgers story. My parents used to live off of the instant 'crystals' when I was growing up in Seattle, can you imagine if anyone else knew that they drank folgers crystals IN SEATTLE?! Blasphemy!

    Just found your flickr and your blog this morning. great stuff! (just what i need ... another blog to check in on. Ha!) i was a folger's gal from 18-21 or so, myself. these look amazing. anything with shortbread texture must be good. Can I ask, is that a gallon freezer bag, or larger?

  35. I saw these here last week and they looked so good, I made them the next day. They are delicious--and so easy. The bag is a wonderfully clever idea. I took a bag of the shortbread and some white chocolate/cranberry biscotti that I make occasionally to my daughter's regatta on Saturday and they were gobbled up in a flash. I'll definately make them again, and I agree with you, I'll make a double batch next time . Thanks so much for the recipe.
